Artisanal biscuit production in the Marais Poitevin: galettes, cookies, croquants..... Christophe, the father, and Jean, his son, first took over the L'Echoppe du Marais shop: wine cellars, beers, rums and whiskies can all be found in this authentic shop nestling in a small village in the Venise Verte region. They then decided to develop a biscuit business, and bought the Biscuiterie de Coulon. The production workshop is now at Le Mazeau, and Rémi is in charge of the stoves: everything is done on site, from kneading to labelling! They've developed a wide range of products, from buttery galettes to crispies and cookies, right through to aperitifs! "Olé Bon!
